dc.descriptionWorldwide, the concern for the use of waste or by-products has taken great strength among the scientific community and especially at the industrial level, where transformation processes generate by-products that can be useful in other activities (Saval, 2012). Agribusiness is an economic activity that combines the agricultural production process with the industrial one to generate food or semi-processed raw materials destined for the market. Among the products that are industrialized are: fruits, vegetables, roots, seeds, leaves, tubers and pods, some are marketed fresh and others are processed into nectars, juices, jams, salads, flours, wines, powdered concentrates, preserves and others.es_ES
dc.description.abstractA nivel mundial, la preocupación por el aprovechamiento de residuos o subproductos ha tomado gran fuerza entre la comunidad científica y sobre todo a nivel industrial, en donde los procesos de transformación generan subproductos que pueden ser útiles en otras actividades (Saval, 2012). La agroindustria es una actividad económica que combina el proceso productivo agrícola con el industrial para generar alimentos o materias primas semi-elaboradas destinadas al mercado. Entre los productos que se industrializan están: frutas, verduras, raíces, semillas, hojas, tubérculos y vainas, algunos se comercializan en fresco y otros son transformados en néctares, jugos, mermeladas, ensaladas, harinas, vinos, concentrados en polvo, conservas y otros.es_ES
